QUICHE (CHEESE PIE) 
Pie crust for 9-inch pie
1 tbsp. softened butter
2 c. heavy cream
4 eggs
3/4 tsp. salt
1 c. shredded Swiss cheese
1/4 tsp. butter
1 (4 oz.) can mushrooms
2 tbsp. chopped onion
2 tbsp. minced green pepper
1/2 c. crumbled bacon or diced ham

Preheat oven to 425 degrees. Spread pie crust with 1 tablespoon butter. In medium bowl, mix cream, eggs, salt, and cheese. Set aside. Drain mushrooms and saute with peppers and onions in butter until onions and peppers are tender. Add to cream mixture along with bacon or ham. Pour into pie crust. Bake 15 minutes. Reduce heat to 325 degrees and continue baking 35 minutes.
