COCONUT SPICED RICE 
2 tsp. butter
1 onion, chopped
1 clove garlic, minced
2 1/2 c. water
1 c. long grained enriched rice
2 tbsp. lemon juice
1/2 tsp. dried thyme
2 tsp. grated lemon peel
1 tsp. coconut flavoring
1/4 tsp. ground allspice
10 oz. pkg. frozen peas & carrots

Combine butter, onion and garlic in non-stick pan. Cook and stir until onion begins to brown.

Stir in remaining ingredients except vegetables. Cover tightly and simmer 15 minutes.

Add frozen vegetables, cover and simmer 10 to 15 minutes more. Makes 4 servings.
