ONE 13 BY 9 INCH CAKE PAN
1 can apple pie filling
2 c. sifted flour
1 c. sugar
1 1/2 tsp. baking soda
1 tsp. salt
2 eggs, beaten
2/3 c. cooking oil
3/4 c. chopped walnuts

TOPPING:

1 c. sugar
1/2 c. dairy sour cream
1/2 tsp. baking soda

Spread pie filling in bottom of greased 13"x9" pan. Sift flour once, measure, add sugar, soda and salt and sift again. Sprinkle over the filling. Combine eggs, vanilla, oil and 1/2 cup of the walnuts; mix well. Pour over ingredients in the pan and stir only until blended. Smooth batter evenly in the pan and bake in a 350 degree oven for 40 to 50 minutes or until a cake tester comes out clean when inserted in the center. Remove cake from the oven and puncture the top with tines of a fork.

TOPPING: To make the topping, combine sugar, sour cream and soda in a saucepan and cook over moderate heat, stirring constantly until mixture comes to a boil. Remove from the heat and pour over cake.

NOTE: Cherry, peach, apricot or pineapple pie filling can also be used.
