GARBANZO SOUP | |
1/2 lb. garbanzo beans 1 beef bone 1 ham bone 1 tbsp. salt 1 onion, finely chopped 2 potatoes, cut in quarters 1/2 tsp. paprika 2 qts. water 1/4 lb. salt pork 1 charizo (Spanish sausage) Pinch of saffron Wash garbanzos. Soak overnight with a tablespoon of salt in sufficient water to cover beans. When ready to cook, drain. Put beans in large pot, with 2 quarts of water, ham and beef bone. Cook for 45 minutes, slow, skimming off foam. Cut salt pork into thin strips and fry, slowly in skillet. Add chopped onions, saute lightly. Add this to beans, along with potatoes, paprika and saffron. Add more salt to taste. When potatoes are done, remove from fire and add chorizo that has been cut in thin round slices. |
