SWEET POTATO BAKE 
1 lb. 2 oz. can whole or cut sweet potatoes, drained
3 tbsp. melted butter
1/2 tsp. salt
1/4 c. orange juice
1 c. crushed pineapple
1 tbsp. butter
Marshmallows

Mash potatoes; add melted butter, orange juice and salt. Beat until light and fluffy. Add pineapple. Pour into greased 1-quart casserole and dot with butter. Bake in 350 degree oven for 15 minutes. Top with marshmallows and bake about 15 minutes longer or until marshmallows are melted and golden brown. Serves 4-5.
