APPLE HARVEST SQUARES | |
1 1/2 c. all-purpose flour 1/2 tsp. salt 1 c. sugar, divided into 3rds 1/2 c. butter 4 c. sliced peeled apples 2 tbsp. lemon juice 1 tsp. ground cinnamon 1 egg, lightly beaten 1/3 c. evaporated milk 1 tsp. vanilla extract 3/4 c. chopped nuts 1 1/3 c. flaked coconut In a bowl, combine flour, salt and 1/3 cup sugar. Cut in butter until the mixture resembles fine crumbs. Press into bottom of a greased 13 x 9 x 2 inch pan. Arrange the apple slices on top of the crumbs. Sprinkle with lemon juice. Combine the 1/3 cup sugar with cinnamon. Sprinkle over the apples. Bake at 375 degrees for 20 minutes. Meanwhile in a small bowl, combine remaining sugar and the rest of ingredients. Spoon over baked apples. Bake for another 20 minutes or until golden brown. Cut into squares while still warm. Can be served with whipped cream or ice cream. |
