CREPES 
4 eggs
2 c. milk
2 c. flour
1 tsp. salt
2 tbsp. sugar
1 tsp. lemon juice

In bowl beat eggs and add milk. Mix all dry ingredients, flour, salt, sugar and fold into liquid very slowly. Add lemon juice. Beat until smooth. Cover and set aside for 1 hour.

Heat skillet, add 1 teaspoon butter, tilt pan so all of bottom is greased. Pour into hot skillet 3 tablespoons of batter, rapidly tilting pan so batter covers entire bottom. Fry until top loses gloss. Carefully turn crepe, brown other side. Gently flip onto plate - repeat until all crepes are done.

Fill (with desired filling, favorite jelly, etc.), roll up and place in rows on baking pan. Heat through in oven. Sprinkle with powdered sugar and serve.
