SAUSAGE AND SHELLS 
2 to 3 lbs. sausage, unencased
2 to 3 c. uncooked macaroni shells (med. size)
2 tsp. vegetable oil
2 med. onions, chopped
1 (1 lb.) can tomato sauce
1 tsp. Italian herbs or oregano and basil
1/2 tsp. pepper
1/4 tsp. cayenne pepper or chili powder
1 brick sharp Cheddar cheese, shredded
3 cloves garlic, minced

Cook macaroni shells according to package directions. Drain and set aside. Heat the oil in a skillet until very hot. Add onion and garlic; stir fry until onion is translucent. Add sausage and thoroughly brown. Drain mixture and return to skillet. Over moderate heat, add tomato sauce and spices. Cook, stirring constantly, for about 10 minutes. Add macaroni shells and blend thoroughly until heated through. Stir in cheese and serve immediately. You don't have to wait for the cheese to melt completely. Warm garlic bread, tossed green salad, and a dry red wine are great with this. It will feed an army.
