WILD DUCK 
1 wild duck (or more)
Salt
Pepper
2 tbsp. fat
Water

Soak duck for several hours in water with 1 teaspoon salt and 1 teaspoon baking soda for each quart of water used. Rinse in clear water. Wipe dry. Place onion, celery and carrot or halves of orange or halves of apple inside of duck. Heat kettle, add fat and brown duck. Add water and place in oven for about 1 hour. If using bread stuffing, 1 1/2 hours.
