CARROT CHEDDAR COOKIES 
1 1/2 c. Quaker oats
1 c. shredded cheddar cheese (4 oz.)
1 c. shredded carrot
3/4 c. all purpose flour
2/3 c. butter, softened
1/2 c. raisins or chopped dates, if desired
1/3 c. firmly packed brown sugar
1 egg
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. baking soda
1/8 tsp. cloves

Combine all ingredients; mix well. Drop by rounded teaspoonfuls onto ungreased cookie sheet; flatten slightly. Bake at 375 degrees for 16-18 minutes or until golden brown. Store tightly covered in refrigerator or in loosely covered container at room temperature. Makes approximately 2 dozen cookies.
