CARROT CHEDDAR COOKIES 
1 1/2 c. old fashioned rolled oats
1 c. shredded cheddar cheese
1 c. shredded carrot
3/4 c. flour
2/3 c. butter, softened
1/3 c. brown sugar
1/2 c. chopped raisins or dates
1 egg
1 tsp. cinnamon
1 tsp. vanilla
1/2 tsp. salt
1/4 tsp. baking soda
1/8 tsp. cloves

Combine all ingredients, mix well. Drop by rounded tablespoons onto ungreased cookie sheet; flatten slightly. Bake at 375 degrees 16 to 18 minutes or until golden brown.
