CARROT - PINEAPPLE HEALTH CAKE 
1 1/2 c. self-rising flour
1 c. brown sugar, loosely packed
1 tsp. baking soda
1 tsp. (more) cinnamon
1/2 tsp. salt
2/3 c. oil
2 eggs
1 c. grated carrots
1/2 c. crushed pineapple with juice
1 tsp. vanilla

Grease 9 inch square cake pan and line base with greased wax paper. Set oven at 350 degrees. Place flour, sugar, soda, cinnamon and salt in a large bowl, stir to mix well. Add the remaining ingredients and blend well with wooden spoon. Pour into pan, bake 35-40 minutes. Top with favorite vanilla or cream cheese frosting.
