PINEAPPLE COCONUT CAKE 
1 c. sugar
1 c. buttermilk
1 stick butter
3 egg yolks
1 1/2 c. plain flour
1 tsp. baking soda
Pinch of salt
1 tsp. vanilla

Bake at 350 degrees. While cake is still hot put 1 can of crushed pineapple on top.

ICING:

3/4 c. sugar
1 tsp. vanilla
3 tbsp. water
2 tbsp. white syrup

Boil until peaks of thread spin. Beat 3 egg whites stiff or until peaks form. Pour in syrup mixture. Top with 1 cup coconut.
