ARLENE'S ICE CREAM NUT ROLLS 
1 lb. butter (cold, do not melt)
4 c. flour
1 pt. vanilla ice cream, softened
1 tsp. vanilla
powdered sugar
Nut Filling (recipe to follow)

Nut Filling:

3/4 c. scalded milk
1 c. sugar
4 c. walnuts, finely ground
1 tsp. vanilla

In a large mixing bowl, cut butter into flour for pastry. Add softened ice cream and vanilla. Mix well until a heavy smooth dough forms. Divide dough into 8 portions and shape into balls. Cover with wax paper. Refrigerate 3 hours or overnight.

When ready to use, preheat oven to 350°F. Place cookie sheets inside too. Sprinkle a flat surface with powdered sugar. Roll out each ball into a circle about 12-inches in diameter. Cut each circle into 12 pizza like wedges. Spread each wedge with Nut Filling or any other kind of pastry filling. Roll from wide end to narrow and place on preheated baking sheets.

Bake for 20 minutes. Remove immediately from baking sheet and place on wire rack to cool. Dust generously with powdered sugar. Do not put in an airtight container. Put them in a gift box lined with wax paper with the lid on as long as it lets enough air in to keep them from getting soggy. They may be frozen too.

Makes 100 cookies.

Nut Filling: In a small bowl, place scalded milk and sugar. Stir until dissolved. Add nuts and vanilla. Blend well.
