SPAGHETTI WITH HERBED TOMATOES
AND CHEESE
 
8 oz. spaghetti
2 tbsp. olive or vegetable oil
1 clove garlic, minced
3 med. tomatoes, diced
2 tsp. basil
1/2 tsp. salt
1 c. shredded Mozzarella cheese
1/4 grated Parmesan cheese

In large saucepan cook spaghetti according to directions in 2 quart saucepan over medium heat. Cook garlic in oil until tender. Stir in tomatoes, basil, and salt. Heat through - stirring. Drain spaghetti well. Return to pan, toss gently with tomato mixture and cheeses. Serve immediately.
