FUDGE CAKE 
3/4 c. vegetable shortening
1 c. sugar
2 c. flour
1/4 c. cocoa
1 1/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
7 tsp. powdered milk
1/2 c. water
3/4 tsp. vanilla
1/2 c. egg white
1/4 c. water

Mix together all ingredients, except egg whites and last amount of water. Beat at medium speed for 5 minutes. Add last two ingredients and beat another 5 minutes. Pour into 9x12 or two 9x9 greased and floured cake pans. Bake at 350 degrees for 22 to 27 minutes.

ICING FOR FUDGE CAKE:

3 1/2 c. confectioners' sugar
5 oz. unsweetened chocolate flavor packets
1 tbsp. shortening (I use Wesson oil)
2 tbsp. corn syrup
1/4 tsp. salt
3 tbsp. water
3 tbsp. water (add more drops of water if necessary)
1/2 tsp. vanilla

Mix together first 6 ingredients until smooth. Then add last two ingredients until smooth and creamy. NOTE: This wonderful cake is also wonderfully rich!
