BAKED WELSH RAREBIT 
4 slices white bread
8 (1 oz.) slices American cheese
2 lg. eggs, beaten
2 tbsp. prepared mustard
1 c. skim milk
1 tsp. Worcestershire sauce
Paprika or minced fresh parsley for garnish

Preheat oven to 350 degrees. Place bread slices in large shallow casserole or baking pan (oblong); do not overlap slices. Place 2 slices cheese on each slice of bread. Combine remaining ingredients except garnish; mix well. Pour on top of cheese and bread. Bake 25 minutes. Garnish with paprika or parsley or some other fresh herb you may like, such as cilantro, curled cress, chercil etc., minced or chopped up. Makes 4 servings.

1 serving: 1 slice of bread plus cheese sauce. Food exchanges per serving: 2 1/2 high-fat meat exchanges, plus 1 starch exchange. Not for low-sodium diets.
