SAUSAGE AND SHRIMP JAMBALAYA 
1 lb. smoked sausage
1 lb. shrimp or crawfish
1 c. rice
1 lg. yellow onion, chopped
1 bell pepper, chopped
3 ribs celery, chopped
1 1/2 qts. water
Salt and pepper to taste
4 tbsp. cooking oil

1. In heavy skillet saute onion, celery and pepper in cooking oil. Add sausage and shrimp and cook over medium heat for 15 minutes. Add rice and water.

2. Bring to a boil and then lower heat down as low as possible. Cover tightly and cook for about 45 minutes or until all liquid is absorbed and rice is tender. Serve with green salad and garlic bread.
