CARROT SPICE LOAF | |
2 1/4 c. all-purpose flour 1 1/4 c. plus 3 tbsp. oatmeal (uncooked) 3/4 c. packed brown sugar 1/2 c. chopped dates or raisins 4 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. cinnamon 1/4 tsp. salt 1/4 tsp. ground ginger (optional) 1/2 c. thawed apple juice concentrate 1/3 c. vegetable oil 1/4 c. water 4 egg whites 1 c. shredded carrots Heat oven to 350 degrees. Oil 8 x 4 or 9 x 5 inch loaf pan. Combine dry ingredients except 3 tablespoons oats. Mix. Add combined liquid ingredients, mixing just until moistened. Fold in carrots. Spread evenly into prepared pan. Sprinkle with remaining oats. Bake 70 minutes or until inserted toothpick comes out clean. Cool 10 minutes; remove from pan. Store covered. |
