HONEY PECAN CHICKEN 
2 c. stuffing mix
1 c. orange juice
1/2 c. boiling water
1/3 c. pecans
2 tbsp. butter
4 boned, skinned chicken breast halves
4 strips bacon
2 tbsp. honey

Combine 1/2 cup orange juice, pecans, butter, water and stuffing; let stand 5 minutes.

Pound chicken breasts to flatten, place 1/4 stuffing mixture on center of each chicken breast, roll and wrap 1 piece of bacon around each and secure with toothpick. Place on greased pan, baste with mixture of 1/2 cup orange juice and 2 tablespoons honey. Bake 40 minutes at 350 degrees. Serves 4.
