VIDALIA ONION CASSEROLE 
5 lg. Vidalia onions
1 stick of butter
Parmesan cheese
1 stack crushed Ritz crackers

Peel and slice onions into thin rings. Saute slowly in butter until limp. Pour 1/2 into greased casserole. Cover with Parmesan cheese and cracker crumbs. Repeat layers. Bake at 350 degrees for 20 to 30 minutes.
