SAUSAGES WITH RED PEPPERS 
3 tbsp. olive oil
1 lg. red onion, peeled, halved lengthwise, sliced across
6 lg. red bell peppers, stemmed, seeded, cut in strips
3 tbsp. red wine vinegar
Salt & pepper
4 or 5 sweet or hot Italian sausages, parboiled, cut in rounds

Heat oil in a large, heavy skillet over moderate heat. Add onion, stir to coat with oil and cook gently for a couple of minutes. Turn in red pepper strips and saute gently until just beginning to soften. Add the vinegar and salt and pepper to taste and cook over moderately high heat for a minute or 2. Add the sausage pieces and saute until most of the liquid in the pan has evaporated. Serve immediately with fried potatoes. Serves 4 to 6.
