SCALLOPED ONIONS 
3 lg. Walla Walla onions, sliced
1/4 c. green pepper, chopped
1 c. grated cheese
2 eggs, beaten
1 tsp. salt
1/4 c. butter
2 tbsp. pimento
1 c. crushed saltines
3/4 c. half & half
Dash of pepper

Melt butter in skillet, add onion and green pepper, saute until tender (dry). Stir in pimento, spread 1/2 of mixture in 8 x 8 dish, sprinkle 1/2 of cheese and 1/2 crumbs. Repeat layers of onion and cheese. Beat eggs and cream, add salt and pepper and pour over onions. Top with remaining crumbs and bake 350 degrees for 25 minutes or until set.
