CARROT NUT BREAD 
1 c. sugar
3/4 c. oil
2 eggs, well beaten
1 1/2 c. flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1 1/2 c. grated carrots
1/2 c. chopped nuts (pecans or walnuts)

Mix sugar and shortening; add eggs. Sift dry ingredients; add sugar mixture. Stir in carrots and nuts. Bake at 350 degrees for 1 hour in greased loaf pan.
