DATE NUT BALLS 
1 stick butter, melted
1 c. sugar
1 beaten egg
1 c. chopped nuts
1 c. chopped dates
2 c. crispy rice cereal
1 tsp. vanilla
1 can coconut

Combine butter, sugar, egg, nuts and dates in a saucepan and cook over low heat for 10 minutes. Remove from heat and add rice cereal and vanilla. When cool enough to handle, roll into small balls, then roll in coconut. Refrigerate for 1 hour.

These do not require refrigeration.
