COFFEE SYRUP 
1 1/2 cups granulated sugar
1 cup water
1 tablespoon vanilla

Combine ingredients in a pot and place on stove top on High heat. Bring to a boil. Allow to simmer for two to three minutes.

You can vary the extracts used as a substitute for vanilla. I have made Hazelnut, Butter Rum, and yes... even coffee flavor.
