PEAS, MUSHROOMS, AND RICE 
1 1/2 to 2 c. cooked rice
1 (4 oz.) can mushrooms
1 (10 oz.) pkg. frozen peas
1/4 c. oil
3 tbsp. butter
Salt and pepper to taste
1-2 lg. onions, chopped

In large pan, lightly saute onions in oil and butter. Add peas; cook until slightly firm. Add mushrooms, salt and pepper, then add cooked rice. Cook a few minutes longer, until rice is heated through. Serve.
