BLACK-EYED PEAS AND RICE 
1 can chicken broth
1/2 c. uncooked rice
1 can black-eyed peas
Water
1 sm. onion, chopped

Add water to chicken broth to make 1 1/2 cups; bring to boil. Add rice and onion and simmer until tender but not sticky. Remove from heat and add peas, tossing lightly to mix.
