MEXICAN CASSEROLE 
1 1/2 lb. ground beef
1 med. onion, chopped
1 (10 1/2 oz.) can cream of chicken soup
1 (10 1/2 oz.) can cream of mushroom soup
1 (10 1/2 oz.) can enchilada sauce
1 sm. can chopped green chilies
1 doz. corn tortillas
1/2 lb. grated cheese
Salt & pepper to taste

Brown meat and onion in skillet. Add chopped chilies, soups and sauce. Cook low until well blended. Place tortillas in bottom of long baking dish. Cover with layer of meat sauce. Alternate with layers of tortillas and sauce. Should make 2-3 layers, ending with meat sauce. Cover with grated cheese. Bake at 350 degrees for 20 minutes. Serves 6-8 people.
