PINEAPPLE SHEET CAKE 
2 c. flour
2 eggs
2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
1 (1 lb.) can crushed pineapple and juice

Mix all together and bake 20 to 25 minutes at 350 degrees. Use a greased jelly roll pan or cookie sheet.

FROSTING:

1 1/2 c. sugar
1 sm. can (2/3 c.) evaporated milk
1 stick butter

Bring to a boil; stir and boil 4 minutes.

Add: 1 c. coconut 1 tsp. vanilla

Cool frosting until it starts to thicken before pouring on the warm cake.
