CHICKEN ALVA | |
This is THE most delicious chicken dish you will ever eat! 1 (3 lb.) whole chicken Ghee (for rubbing chicken) STUFFING: 2 bananas, chopped 1 cup golden raisins 1/2 cup chopped celery 1 small onion, chopped 1/4 cup apricots, chopped fine 1 tbsp. cumin 2 cups cooked brown rice 1 tsp. salt 1/4 cup Ghee (clarified butter) Preheat oven to 350°F. Rinse and pat dry the chicken inside and out. Place on cooking pan. Mix stuffing ingredients and stuff into the cavity and under breast skin of the chicken. Rub outside of chicken all over with Ghee and sprinkle with salt. Roast chicken at 350°F for about an hour or until done (when internal temperature reaches 165°F on a meat thermometer).
