ROYAL HAWAIIAN BANANA MUFFINS 
2 c. sugar
2 c. shortening
6 bananas, mashed
4 eggs, well beaten
2 1/2 c. cake flour
1 tsp. salt
2 tsp. baking soda
Macademia OR walnuts, chopped (optional)

Cream sugar and shortening until blended. Add bananas and eggs. Sift dry ingredients together 3 times and blend with batter. Do not over mix. Pour into greased muffin tins. Bake at 350 degrees for 20-25 minutes. Yield: 2 dozen.
