MEAT LOAF 
2 lbs. ground beef
1 c. grated potatoes
1 c. grated carrots
1/2 c. chopped celery
1 med. onion
1 egg, slightly beaten
3/4 c. tomato juice
1 1/2 c. bread crumbs
Salt, pepper & garlic, to taste

Mix ingredients in order given. Place in loaf pan. Make indentation with fingers in loaf, then pour additional tomato juice to cover loaf. Bake at 350 degrees for 1 hour and 15 minutes. Loaf is moist when done. 8 servings.
