SHRIMP SCAMPI | |
1 1/2 lb. shrimp 3/4 c. butter 1 1/2 tsp. minced garlic (I use the minced in the jar) 1/2 c. green onions, chopped fine 2 tbsp. lemon juice 1 tbsp. Worcestershire sauce 1/8 tsp. cayenne pepper 1 tbsp. minced parsley 1/4 c. white cooking wine Hot cajun seasoning Peel and devein shrimp, rinse and drain. Shake cajun seasoning over them and set aside. Melt butter in saute pan. Add garlic, onions, parsley and saute until tender. Add shrimp and remaining ingredients and cook for about 6 minutes or until tender. Place shrimp in individual bowl with the garlic butter spooned on top. Garnish with springs of parsley and lemon slices. Serve with French bread to dunk in sauce. I use lots of cajun seasoning or Tony Chacher's seasoning. Very easy! Serves 4. |
