SURPRISE MUFFINS 
2 c. flour
1/4 c. sugar
3 tsp. baking powder
1 tsp. salt
1 egg, slightly beaten
1 c. milk
1/4 c. vegetable oil or melted shortening
1 jar jelly or jam

Heat oven to 400 degrees.

Stir together dry ingredients; make a well in center of the mixture. Stir egg, milk and shortening together in separate bowl. Add egg mixture into "well" of dry ingredients. Stir just until flour is moistened.

Fill muffin cups 1/2 full of batter. Drop a teaspoonful of jelly in center of batter. Add more batter to fill muffin cups 2/3 full. Bake 20-25 minutes until golden brown. Discovering the jelly inside the baked muffins is a surprise! Makes 12.
