SURPRISE CAKES 
1 Duncan Hines lemon supreme or coconut cake mix
1/2 c. sugar
1/2 c. Wesson oil
1 c. apricot nectar
4 eggs
1 tsp. vanilla or 1/2 tsp. vanilla and 1/2 tsp. rum extract

Mix together well cake mix, sugar, oil and apricot nectar. Add eggs, one at a time. Add flavorings. Bake at 300 to 325 degrees for about 1 hour in Bundt pan.

ICING:

1 c. confectioners' sugar
Juice from 1 lemon

Mix together confectioners' sugar and lemon juice. Pour over cake while warm and let run down sides.
