RAW MUSHROOM SALAD 
1 lb. raw mushrooms
1/2 c. salad or olive oil
1/4 c. wine vinegar
2 tbsp. capers
1/2 sm. red pimiento or raw pepper
Pinch of cayenne pepper
Salt and pepper to taste

Wash and slice mushrooms. Make a marinade of the oil, vinegar, cayenne, pimiento, capers, salt and pepper. Pour marinade over mushrooms and toss lightly. Refrigerate for 1 or 2 hours, tossing occasionally. Serves 6-8.
