CORNWALLIS YAMS 
6 med. sweet potatoes
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 lb. butter
3 eggs, beaten
1/2 c. grated coconut
1/2 c. crushed pineapple
1 1/2 c. milk
Marshmallows

Boil sweet potatoes; peel and mash. Season with salt, cinnamon, nutmeg and butter. Add beaten eggs, coconut, pineapple and milk. Place in greased casserole and top with marshmallows. Bake in a 350 degree oven until light brown. Approximately 20 servings.
