BROCCOLI SALAD 
DRESSING:

Can be made in microwave. Combine:

1 egg
1/2 c. sugar
1 1/2 tsp. cornstarch
1 tsp. dry mustard

Cook to thicken. Slowly add 1/4 cup vinegar and 1/4 cup water. Cook a little more to thicken. Add 3 tablespoons softened butter and 1/2 cup mayonnaise. Chill.

SALAD:

4 c. fresh broccoli flowerettes, 1" pieces
1/2 c. golden raisins
2 slices bacon, cooked & crumbled
2 c. sliced fresh mushrooms
1/2 c. sliced almonds, toasted
1 can mandarin oranges, drained
1/2 med. red onion, sliced into rings

Toss with dressing. Serves 10-12.

Since microwave ovens vary in power, you may need to adjust your cooking time.
