1 egg 1/2 c. dark molasses 1 1/4 tsp. nutmeg 1/2 tsp. cloves 1/2 tsp. baking soda 1/2 c. chopped mixed & candied fruits & peels 3/4 c. brown sugar 1/2 c. honey 3 c. flour 1 1/4 tsp. cinnamon 1/2 tsp. allspice 1/2 c. almonds Beat egg, add brown sugar, beat until fluffy. Stir in honey and molasses. Sift together dry ingredients, add to first mixture, mix well. Stir in nuts, fruits, peels. Chill several hours or overnight. On floured surface, roll 1/2 inch thick. Cut in 3 1/2 x 2 inch rectangles, then roll into cookies. Bake on greased cookie sheet at 350 degrees for about 12 minutes. Cool slightly, remove from pan. While warm, glaze. Makes 2 dozen. GLAZE: 1 slightly beaten egg white 1 tbsp. lemon 1/2 tsp. grated lemon peel Dash of salt 1 1/2 c. confectioners' sugar Combine. |
