PRUNE BREAD 
1 egg
2 c. sugar
1 tbsp. butter, softened
1/2 tsp. salt
1 tsp. vanilla
1 1/2 to 2 c. prune juice (hot)
1 c. prunes, cooked & chopped
3 3/4 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 c. walnuts

Cook prunes in 2 1/2 cups of water for 20 minutes (save liquid). Cream egg, sugar, salt and vanilla. Add flour, baking powder and baking soda. Stir in liquid prune juice. Add prunes and nuts. Pour into greased loaf pans.

Bake 1 hour at 350 degrees. Makes 2 loaves.

Old German recipe. Low in cholesterol, no fats, only 1 egg.
