EMPEROR'S DESSERT | |
4 oz. plain flour 4 egg yolks A little salt 2 drops lemon flavoring 1/2 pt. milk or cream 3 oz. currants 3 oz. almonds (ground) 4 egg whites 3 oz. butter for frying A little sugar for sprinkling Sift the flour into a bowl and make a well in the center. Beat the egg yolks with a little of the milk or cream, salt and flavoring and pour mixture into the well. Starting from the middle, stir the egg yolks into the flour, then gradually add the remaining milk or cream, stirring all the time to avoid lumps. Wash and drain the currants and add them to the batter, together with the almonds. Lastly, whisk the egg whites until stiff and fold carefully into the batter. Heat the fat in a frying pan and pour in batter to about 3/8 inch thickness. Fry the underside light yellow, then tear into small pieces with 2 forks. Brown the pieces well, turning them frequently. Serve sprinkled with sugar. Frying time: 8-10 minutes. |
