1 qt. milk 1/4 c. butter, cut into pieces 1 c. regular (NOT instant) hominy grits 1 tsp. salt 1/2 tsp. pepper 1/3 c. melted butter 1 c. Swiss cheese, grated 1/3 c. fresh Parmesan cheese, grated Bring milk to a boil. Add 1/4 cup butter cut into pieces. Gradually stir in hominy grits and resume boiling. Continue cooking and stirring about 5 minutes. Remove from heat. Add salt and pepper. Beat on high with electric mixer for 5 minutes. Pour into 9x13 pan; allow set. Cut into rectangles and place them one over the other (like fallen dominoes) in an 11x7x2 pan. Pour 1/3 cup melted butter and sprinkle with Swiss cheese and fresh Parmesan cheese. Refrigerate or freeze, covered. Bring to room temperature and bake in a 400 degree oven for 30-35 minutes. A great change from potatoes, guaranteed to get raves. (Don't tell it's grits.) |
