1 c. sugar 1/3 c. vegetable oil 3 eggs Grated peel and juice from 1 orange 3 1/4 c. all-purpose flour 2 tsp. baking powder 1/2 tsp. salt Beat sugar, oil and eggs until blended. Stir in orange peel and orange juice. Mix in flour, baking powder, and salt. Cover and refrigerate at least 2 hours. Heat oven to 375 degrees. Divide dough into halves. Roll each half 1/8 inch thick on lightly floured, cloth-covered board. Cut into 3-inch rounds. Spoon 1 teaspoon filling onto each round. Fold each round to form triangle. Pinch edges together to form slight edge. Place on lightly greased cookie sheet. Bake until golden brown, 12 to 15 minutes. About 4 1/2 dozen cookies. FILLING: 1 lb. cut-up cooked prunes 1 c. chopped nuts 1 tbsp. sugar 1 tbsp. lemon juice Mix all ingredients. |
