BAKED EGGPLANT | |
2 med. to lg. eggplant Seasoned bread crumbs Liquid Butter Buds 2-3 egg whites Sm. amount of milk Peel and slice eggplant. Mix egg whites and butter together. Dip eggplant slices in egg mixture, then dip in bread crumbs, place on cookie sheet. Top each slice with approximately 1/2 to 1 teaspoon of liquid Butter Buds. Bake at 350 degrees for 10 minutes, then brown under broiler until brown. Turn slices over, top with Butter Buds and brown that side until brown. Can eat this way or use in casserole - Parmesan style. |
