TACO SALAD | |
Break up 1 head of crisp lettuce. Place in a large bowl and keep cold. Add one 6-8 ounce package Cheddar cheese, grated. Bake and crumble up some taco shells. Or use any tortilla chips. Chop up some fresh tomatoes, cherry tomatoes work well too. If you can't get some good ones you can use some drained (reserve juice to use in place of the water to cook meat) stewed tomatoes. Cook 1 pound of ground beef, drain fat when meat is browned. Add 1 package taco seasoning mix, cook as package instructs. Use some of the drained tomato juice and enough water to make 1 cup, if you used the stewed tomatoes. Mix the taco shells, tomatoes and cheese with the lettuce. Put hot meat on top, you can add some taco sauce or let everyone put it on their own salad, to taste. |
