TACO RICE SALAD 
1 lb. ground beef or ground turkey
1 med. onion, chopped
1 1/2 c. uncooked rice
1 pkg. taco seasoning mix
16 oz. can stewed tomatoes
6 oz. grated cheddar cheese
Lettuce

Brown meat and onion. Drain tomatoes (save juice) and cut up. Add water to juice of tomatoes to make 2 1/2 cups. Add tomatoes, juice, rice and seasoning mix to meat. Stir and bring to a boil. Reduce heat and cook 25 minutes or until liquid is absorbed. Serve over a bed of lettuce and top with grated cheese. (Minute Rice may be used, reduce cooking time accordingly.) Serves 6.
