PASTA SALAD PARMESAN | |
1/4 c. peanut oil 2 c. broccoli flowerets 1/4 c. scallions or shallots, sliced 1 to 2 cloves garlic, pressed 1/2 tsp. basil leaves, crushed 1/2 tsp. salt 1/2 lb. pasta, cooked 1/2 c. Italian cheese, grated 1 c. cherry tomatoes, cut in half Heat oil to medium high in large skillet. Add broccoli, scallions, garlic, basil and salt. Stir fry until broccoli is tender but crisp (about 4 minutes); remove from heat. Toss with grated cheese, tomatoes and cooked pasta. Toss before serving. |
