CANDIED SWEET POTATOES 
6 med. sweet potatoes
1/2 c. brown sugar
1/2 c. honey
1/2 c. orange juice
1 tsp. grated orange peel

In large saucepan, cook sweet potatoes in boiling water to cover for about 25 minutes or until fork tender. Drain off water and cool potatoes for several hours.

Peel and cut diagonally into 1/4" thick slices. Arrange potato slices in a buttered 13"x9" baking dish.

Preheat oven to 375 degrees.

In small bowl, mix brown sugar, honey, orange juice and peel. Spoon the mixture over potatoes.

Bake, uncovered on the upper shelf of oven for about 45 minutes or until the top of the potatoes are brown. Baste potatoes occasionally with the sugar syrup. Yield: 6 to 8 servings.
