REUBEN SALAD 
1 lg. head lettuce
3/4 lb. sauerkraut, well drained
1 c. cooked corned beef from deli, cut in strips
1/2 c. dill pickle, chopped
2 tomatoes, wedge cut
1 c. Swiss cheese, grated
1 c. Thousand Island dressing

In salad bowl, combine torn lettuce, sauerkraut, corned beef, pickles, and tomatoes. Toss. Sprinkle with cheese. Heat salad dressing and add ground pepper. Pour over salad mixture and toss lightly. Serve immediately with fresh dark bread.
